We are new here. We have posted a listing and have received a positive approach from a sitter. We will be arranging to video call, but we are wondering if there is any way of seeing reviews that have been left for them in the past.

If you click on the housesitters name (on THS website or THS app) then this should take you to their THS profile. Scroll down and you should see reviews/comments from pet parents on past sits. Housesitters can similarly see reviews/comments left for a pet parent by past housesitters.
As @GotYourBack has said, just click on the sitter’s name to be able to read their reviews. Take the time, also, to read their whole profile so you know more about them and look at their photos, especially where they are interacting with pets. Remember you are new hosts who have no reviews so sitters are taking a chance on you too.

Another suggestion : Read reviews your potential sitters’ reviews of previous hosts. This will give you yet more info.
