Welcome Dessert: Easy Blueberry Cobbler

A welcome meal needs a sweet ending. Here is an easy fruit cobbler that comes together quickly with simple ingredients and no mixers needed:

4 tbsp butter

3/4 cup flour

3/4 cup sugar

3/4 cup whole milk

1 - 12 oz package of frozen fruit (I used blueberries today but any berry works well, as do frozen peaches) or 2 cups fresh fruit

1/4 tsp salt

1 teaspoon baking powder

2 tsps vanilla extract

Sprinkle of cinnamon and nutmeg to taste

Preheat oven to 350 degrees. Add butter into an 8 x 8 inch or equivalent baking dish, and place in the oven to let the butter melt.

In the meantime, whisk together the flour, sugar, salt, baking powder, cinnamon and nutmeg. Add the milk and vanilla extract and mix to form a batter.

Remove the baking dish from the oven when all the butter has melted and immediately pour the batter over the melted butter. Do not mix.

Sprinkle the fruit evenly on top of the batter. Do not mix.

Place the dish back in the oven and bake for 40-50 minutes until the fruit is bubbly and the cobbler has an even brown color.

Optional: Sprinkle the top with turbinado sugar right when the cobbler is taken out of the oven.

Let cool and serve room temperature with a scoop of vanilla ice cream or fresh whipped cream.

Leftovers are fantastic with coffee in the morning :slight_smile:
