Are you bothered to read HO’s 5 stars reviews?
Definitely yes. In fact the number of stars is not really relevant for me, 5 is mostly taken as the norm, so not really informative but also a low rating could be revengeful or unfair so I read not only the reviews that HOs get but also the ones they write. If they have missing reviews or the occasional not so positive, I then check out other reviews from the same sitters to see if it might be more a sitters’ than an HO’s thing.
I only bother to read all that if there are no red flags or requirements I am not willing to accept.
Of course, a red flag for me may not be such for others.

So are you saying that the majority of your sits/correspondence have been with not-so-good HO’s, because we’ve had the opposite.
You only mention the odd not-so-great ones, but what about all the ones that are lovely.
The connection between each sitter and owner is different. The previous sitters may well have had a fantastic connection with the owners, and they deserved 5 stars on those occasions in their eyes.
