And one should not need to throw away the “discard” each week! You can make sourdough crumpets, waffles, pancakes, crackers, pizza dough, focaccia, etc, or of course, a loaf of bread!
To my shame, on one of our early sits there was some sourdough starter in the fridge and I had absolutely no idea what it was. As usual on arrival, we chucked out all the dubious-looking or out-of-date stuff, including this frothy gloop (which I assumed was something fermenting due to being ‘off’).
The HO gave us a glowing review and never mentioned this error. What a fool I felt, when I discovered - months later - what I’d done!

Look, this is a fun topic of course and I love the humor generated…but really can’t they just pay you an extra $20-30 for your efforts. Why is the exchange of money when you go above and beyond so verboten?
I’m a new Kombucha mum, but been trained by a long standing one. Important question for me was what happens when we go away. Answer is it can sleep in the fridge :). I halve my scoby (it grows) and put in sealed tupperware in fridge with some of the liquid and it sleeps for weeks quite happily with no feeding.
