Leftovers recipes


Towards the end of a sit there’s always an odd mix of ingredients to be used up. I like to make chicken burgers from bits left over from a roast chicken we’ve eaten early on in a sit and used in different ways throughout the sit. I chop the last bits of chicken in a Bullet mixer, add any left over stuffing plus an egg, add S&P dust in plain flour and low fry in olive oil. Served up with Thai spicy sauce and gherkins, two are pretty filling. The bones I boil up and fill small empty milk cartons to freeze as stock or make soup.
I also use the larger leftovers to make chicken sandwiches for trips out, or make Paella adding prawns, or a chicken curry.

Reminds me of my childhood, where the Sunday roast reappeared in various guises at least twice during the week!

Ah well the answer is to make meals that are frozen and can be used in the future not immediately otherwise it gets boring eating chicken every day for a week!
