We have had three serious emergencies at sits: if we had not been there, the HO would have had huge damage to structure & their personal things. Sure, insurance covers a lot - but check your insurance policy. Some are voided if the home is left unoccuppied for more than 7 days. And NO insurance can replace heirlooms and things that mean more than just monetary value.
You may want those sitters even with no pets (BTW probably 20% of our sits have no animal for this reason.)
I’d let the sitters know what has happened and that you’re unsure of how to go forward. Maybe they have had a change of plans. Maybe they will suggest a compromise that also works for you. Perhaps split the utilities in exchange for having the security of their presence and them having the stability of a long-term sit.
