I just set up our listing yesterday and was kind of overwhelmed by how quickly applications came in. I inadvertently declined the person I wanted to invite. Do I have to do anything other than message them?

Yes you are correct. I’d just blame it on being new and saying that you declined by mistake.
I know how you feel 
I used to hang up on people constantly with my old phone, because the buttons were backwards from the previous one.
