We have 2 trips next spring with a month in between. Can I list 2 sets of dates when making our listing live?

Yes, you can list multiple sit dates.
Once you list your dates, click on manage dates, at the bottom… you can click on add more dates, that’s how you would add a second or more dates. Or if you’re on the app, you can simply click on +add dates.
