Share a recipe you always make on a sit?

My Mum recently gifted me her favourite cookery books (I rewarded her with a fresh omnibus copy of the same set!), complete with her notes (see the yellow post-its!), and it got me thinking…

What kind of recipes are sitters making while they’re on a sit? Do you use recipe books belonging to your host, or do you have tried or tested recipes that are easy to make when you are using someone else’s kitchen?

I’d really love to know how you meal plan, sharing a recipe if you like, or even a photo of your latest culinary creation!

We have a tradition of leaving our hosts a meal in the refrigerator. This is my go to dish

Harrisa Chicken Recipe

Ingredients

1 large onion

4 clove garlic

1 cup rice

1.5 cup chicken stock

1 quarter Preserved lemon

Pepper

1kg free range chicken thighs

Olive oil

2 table spoon Harrisa powder

Coriander

Preparation

Mix Harrisa powder with 2 tbl spoon of olive oil and marinate chicken for at least 2 hours or preferably overnight

In an oven proof lidded pot

Brown chicken in olive oil then remove

Fry onion and garlic until browned

Add rice and coat with oil for a few minutes

Add chicken stock, preserved lemon and pepper then stir to combine

Place chicken on top of rice

Place covered pot in 200c oven for 35 minutes

Serve with coriander leaves

You can also add olives in the mix when adding preserved lemon

Increase or decrease spices based on your preference

One dish meals. I try to keep it simple on sits as I now only do short sits by choice. Sometimes I prepare dishes at home and freeze them to bring. If cooking at host’s home I will bake salmon with vegetables all in the same casserole dish or chicken thigh with vegetables so the vegetables get the added flavor of the chicken juices while baking all in one dish. I tend to try restaurants recommended in the area of the sit and usually have extra to bring back for another meal.

Beef cheek ragu. Slow cooked and easy to re-heat. Just cook pasta to go with it. Hosts can have when they get home or equally good the next night.

Not a sitter, but we have a large and famous local food market downtown that publishes a cookbook. I leave a copy of that in the sitters guest room, with a small note inside of it that if they try any of the recipes to let me know how it turned out! No takers so far, at least that I know of :slight_smile:

This sounds delicious :face_savoring_food:. I’ll have to try it for a nice lunch for myself - my husband would not be ok with any amount of harissa or coriander. Sigh

I make a lasagna. We live in a van and do not have an oven big enough for a lasagna. Usually we make one right before we leave so we can take it on the road with us.

Since we have a van to travel in again, we will mostly be looking for sits with full-size ovens.

I totally now understand the full size oven thing. I am a lasagna lover too. Wish you well, there things I know now as a host that I would accommodate better as a host. Used to be, sorry our HOA doesn’t allow campers/vans etc. Now that we are mobile in an RV, I would probably find a way to accomdate. My “make anywhere” dish is marmite and peanut butter pork udon. I tend to use chicken mince or vegetarian mince though. It’s easily made in one pot so saves on the washing up!

One of our favorite recipes is a similar dish to Jenny’s!

As written, it is too spicy for me, so I cut the sambal in half, and also double the meat! Broccoli or bok choy on the side.
