I am in central nj, my 11 year old cockapoo is diabetic, do any sitters give insulin injections?

Some do. You just need to include it in your listing and I am sure you will get experienced applicants.
I’ve given 2x daily subq insulin injections on several different sits to cats, none of whom (as promised by the owners) even seemed to notice the injection. Easy peasy. Let people know if the dog is chill with it, and for those who haven’t done it before, let them also know this is something that can be taught in under five minutes.
I’ve injected diabetic dogs and cats, it’s easy. Just stress that it’s not hard to learn how to do it, some sitters might be a bit nervous about it.
As noted, some do , some don’t.
As an owner of diabetic cats, I would be VERY careful about chosing a sitter given the requirements of this condition. (Possibly stating the obvious here) You need someone who is responsible, reliable and experienced with bth insulin injections, feeding necessities and signs/symptoms of hypoglycemia.
While sq injections are on the easy side, timing and other considerations are , as you know, crucial. Good luck in your search and “vet” potential sitters carefully.
