Why does USA and Everywhere come up as the 2 default search options when looking for sits? It seems very America-centric.

The main search options are Anywhere, followed by the USA, Europe, United Kingdom, Australia, and Canada. As these are popular housesitting locations you can click on any of these as a shortcut to that location, otherwise, you can free-type the location that you would be interested in sitting in.
Where are you looking to sit? You can also set up saved searches where you can get notified if a sit is in a location that you prefer.

Mine doesn’t look like your screenshot. As I said, it gives 2 options - Everywhere and USA. I have to type in countries manualky.

This search feature should appear for everyone. I would suggest that you log out of your account, clear your browser cookies and cache, and log on again.
