We just got back from Romania after a 2 month holiday break with my fiancé’s family. They eat a lot of different soups in Romania, often different types of ā€˜ciorba’ (sour soups). One of my favourites is ā€˜ciorba de fasole Ć®n paine’ - which is bean sour soup served in a bread loaf :yum: Romanians really love their bread :laughing::bread:

I had mushroom-macadamia nut soup on vacation several years ago and still crave it — my favorite soup ever. Don’t know the recipe at the Dubai hotel where I repeatedly had it, but it looked like this and they added truffle oil:

Think I’ll ask my husband to make it, since he’s the one in the family who cooks, occasionally.

Great topic @PVGemini :heart: it’s very much soup season at the moment and it’s just one of the easiest things to make!

My very favourite soups are those that my Mum makes, she has a solid repertoire!

@PVGemini I work as a swimming teacher and in Autumn and Winter a chunky lentil soup is my go to lunch to give me enough energy to get back in the pool for the afternoon. I’ve been buying soup and then adding chilli or cayenne pepper for added flavour. I definitely need to try this recipe, it sounds perfect!

I lived in a house-share with four other people when I was in my twenties, and I used to make vats of spiced sweet potato soup for us. I don’t have the exact recipe, but this one comes pretty close! So warming and wholesome for the colder months.

The title of this post reminds me of the ā€œBeautiful Soupā€ song from the 1999 adaptation of Alice in Wonderland with Gene Wilder :rofl:

I love soup! I often make a ā€˜base’ at the beginning of the week, keeping some in the fridge and freezing some. And I’ll then add fresh ingredients each time I re-heat a portion.

So this week’s base was:

2 x large potatoes
4 x shallots
1 x large sweet potato
1 x red pepper
2 x tins chopped tomatoes

Cook in a large pan with some stock, then blend. Once blended, I added 2 x tins of spicy mixed beans and 1 x tin of spicy kidney beans.

Each time I re-heat a portion of the base I add different ingredients to the pan – a handful of spinach, some cherry tomatoes, chopped spring onions, olives, feta cheese, jalapeƱos, some sweetcorn… It keeps things fresh and means I don’t get bored of eating the same meal on repeat.

@Debbie Better than canned soup and less expensive! I always double the recipe and use a pound (500 g) of lentils. It makes a big pot, at least 20 servings for pennies!

If you are missing an ingredient, not a big deal. You can use carrots or butternut squash, black beans or other beans—you get the idea. Very flexible. You can add kale or spinach if desired. More broth or less, depending on what consistency you prefer.

@Becca What a great idea! Sounds super yummy!

I knew a French family who would save leftover raw and cooked vegetables from their meals each week, and then all of these would go into a blended soup which they would make and eat the following week.

Such a great way to use up leftovers in a delicious way!

This is korean beef short rib soup called Galbitang. It’s a simple clean taste and is very tasty.

That reminds me of the delicious ā€˜Pho’ in Vietnam. I went back-packing there in my happy-go-lucky 20s without checking what the weather would be like at that time of year. Ended up having to wear most of the clothes I’d taken with me at the same time to keep warm, and those big, steaming bowls of Pho certainly lifted my spirits in the pouring rain!
