We just got back from Romania after a 2 month holiday break with my fiancĆ©ā€™s family. They eat a lot of different soups in Romania, often different types of ā€˜ciorbaā€™ (sour soups). One of my favourites is ā€˜ciorba de fasole Ć®n paineā€™ - which is bean sour soup served in a bread loaf :yum: Romanians really love their bread :laughing::bread:

I had mushroom-macadamia nut soup on vacation several years ago and still crave it ā€” my favorite soup ever. Donā€™t know the recipe at the Dubai hotel where I repeatedly had it, but it looked like this and they added truffle oil:

Think Iā€™ll ask my husband to make it, since heā€™s the one in the family who cooks, occasionally.

Great topic @PVGemini :heart: itā€™s very much soup season at the moment and itā€™s just one of the easiest things to make!

My very favourite soups are those that my Mum makes, she has a solid repertoire!

@PVGemini I work as a swimming teacher and in Autumn and Winter a chunky lentil soup is my go to lunch to give me enough energy to get back in the pool for the afternoon. Iā€™ve been buying soup and then adding chilli or cayenne pepper for added flavour. I definitely need to try this recipe, it sounds perfect!

I lived in a house-share with four other people when I was in my twenties, and I used to make vats of spiced sweet potato soup for us. I donā€™t have the exact recipe, but this one comes pretty close! So warming and wholesome for the colder months.

The title of this post reminds me of the ā€œBeautiful Soupā€ song from the 1999 adaptation of Alice in Wonderland with Gene Wilder :rofl:

I love soup! I often make a ā€˜baseā€™ at the beginning of the week, keeping some in the fridge and freezing some. And Iā€™ll then add fresh ingredients each time I re-heat a portion.

So this weekā€™s base was:

2 x large potatoes
4 x shallots
1 x large sweet potato
1 x red pepper
2 x tins chopped tomatoes

Cook in a large pan with some stock, then blend. Once blended, I added 2 x tins of spicy mixed beans and 1 x tin of spicy kidney beans.

Each time I re-heat a portion of the base I add different ingredients to the pan ā€“ a handful of spinach, some cherry tomatoes, chopped spring onions, olives, feta cheese, jalapeƱos, some sweetcornā€¦ It keeps things fresh and means I donā€™t get bored of eating the same meal on repeat.

@Debbie Better than canned soup and less expensive! I always double the recipe and use a pound (500 g) of lentils. It makes a big pot, at least 20 servings for pennies!

If you are missing an ingredient, not a big deal. You can use carrots or butternut squash, black beans or other beansā€”you get the idea. Very flexible. You can add kale or spinach if desired. More broth or less, depending on what consistency you prefer.

@Becca What a great idea! Sounds super yummy!

I knew a French family who would save leftover raw and cooked vegetables from their meals each week, and then all of these would go into a blended soup which they would make and eat the following week.

Such a great way to use up leftovers in a delicious way!

This is korean beef short rib soup called Galbitang. Itā€™s a simple clean taste and is very tasty.

That reminds me of the delicious ā€˜Phoā€™ in Vietnam. I went back-packing there in my happy-go-lucky 20s without checking what the weather would be like at that time of year. Ended up having to wear most of the clothes Iā€™d taken with me at the same time to keep warm, and those big, steaming bowls of Pho certainly lifted my spirits in the pouring rain!
