We just got back from Romania after a 2 month holiday break with my fiancĆ©ās family. They eat a lot of different soups in Romania, often different types of āciorbaā (sour soups). One of my favourites is āciorba de fasole Ć®n paineā - which is bean sour soup served in a bread loaf Romanians really love their bread
I had mushroom-macadamia nut soup on vacation several years ago and still crave it ā my favorite soup ever. Donāt know the recipe at the Dubai hotel where I repeatedly had it, but it looked like this and they added truffle oil:
Think Iāll ask my husband to make it, since heās the one in the family who cooks, occasionally.

My very favourite soups are those that my Mum makes, she has a solid repertoire!

@PVGemini I work as a swimming teacher and in Autumn and Winter a chunky lentil soup is my go to lunch to give me enough energy to get back in the pool for the afternoon. Iāve been buying soup and then adding chilli or cayenne pepper for added flavour. I definitely need to try this recipe, it sounds perfect!
I lived in a house-share with four other people when I was in my twenties, and I used to make vats of spiced sweet potato soup for us. I donāt have the exact recipe, but this one comes pretty close! So warming and wholesome for the colder months.
The title of this post reminds me of the āBeautiful Soupā song from the 1999 adaptation of Alice in Wonderland with Gene Wilder
I love soup! I often make a ābaseā at the beginning of the week, keeping some in the fridge and freezing some. And Iāll then add fresh ingredients each time I re-heat a portion.
So this weekās base was:
2 x large potatoes
4 x shallots
1 x large sweet potato
1 x red pepper
2 x tins chopped tomatoes
Cook in a large pan with some stock, then blend. Once blended, I added 2 x tins of spicy mixed beans and 1 x tin of spicy kidney beans.
Each time I re-heat a portion of the base I add different ingredients to the pan ā a handful of spinach, some cherry tomatoes, chopped spring onions, olives, feta cheese, jalapeƱos, some sweetcornā¦ It keeps things fresh and means I donāt get bored of eating the same meal on repeat.
@Debbie Better than canned soup and less expensive! I always double the recipe and use a pound (500 g) of lentils. It makes a big pot, at least 20 servings for pennies!
If you are missing an ingredient, not a big deal. You can use carrots or butternut squash, black beans or other beansāyou get the idea. Very flexible. You can add kale or spinach if desired. More broth or less, depending on what consistency you prefer.

I knew a French family who would save leftover raw and cooked vegetables from their meals each week, and then all of these would go into a blended soup which they would make and eat the following week.
Such a great way to use up leftovers in a delicious way!

That reminds me of the delicious āPhoā in Vietnam. I went back-packing there in my happy-go-lucky 20s without checking what the weather would be like at that time of year. Ended up having to wear most of the clothes Iād taken with me at the same time to keep warm, and those big, steaming bowls of Pho certainly lifted my spirits in the pouring rain!
You know pho is good when you get a soup facial and can smell it coming out of your pores for the rest of the day.
